Who is in the room: the operations lead, the materials or warehouse manager, the controller, and somebody from the plant floor who actually knows where things are stored. If the controller is not there, the costing implications do not get raised — and you will redesign later. That is not a maybe: half of this module's decisions have a costing consequence, and the controller is the only person in the room who will name it. Before the workshop, if you possibly can: start with a site walk, not a whiteboard. You will see storage areas nobody mentions and processes nobody documents. The material in the corridor. The rack that is officially not a rack. The bin somebody labelled by hand. None of that is in a requirements document, and all of it is in your subinventory design by the end.
